Easy side dish…. Bacon Topped Baked Beans

Today I made some turkey burgers for our lunch, and decided it was a perfect day to try out a quick Rachel Ray-inspired side dish!

I started with two large cans of baked beans… I went for the generic brand because I knew I was going to doctor these babies up!  No need to go for Bush’s under these conditions 🙂  I greased a shallow baking dish with cooking spray and plopped the beans right in there.  At this point, I sprinkled them with some brown sugar, cayenne pepper, salt and cracked black pepper.  Then, mixed ’em up a little.

Now, I have heard that if you used a pinch of two of ground ginger at this point, it would help reduce the gaseousness of said beans.  I have yet to try this…. mostly because i always forget!!

At this point, P preheated my oven to 425 degrees, and started making the topping.  I diced up about 12 pieces of bacon and got it going in a preheated skillet.  then, I added a clove of minced garlic and half a chopped up sweet onion.  after everything got a little soft, and the bacon was translucent…. I gave the pan a heavy crumbling of brown sugar…. yum!  When the bacon started to crisp up, I turned off the heat (if you use electric, take the pan off the burner as well)

Now you simply add a cup and a half of plain bread crumbs, and some cracked black pepper.  Then spoon the mixture on top of the beans, and bake for 20-25 minutes.  If you use a really shallow dish like i did, I would suggest baking it on a cookie sheet, or you will have to deal with the consequences.  I started to do this.  Then halfway through I thought it was taking too long to cook, and I was in a hurry, and I took the cookie sheet out.  BIG MISTAKE!  I knew my beans were done when i smelt the burning goodness of the bottom of the oven.  True story.

When it’s all bubbly and brown on the top…. pull it out of the oven and enjoy!

Bacon Topped Baked Beans

  • 2 15 oz cans of baked beans
  • brown sugar
  • cayenne pepper
  • salt & black pepper
  • 12 pieces bacon
  • 1 clove garlic
  • half a large sweet onion, chopped
  • 1 1/2 cups plain bread crumbs

Grease a shallow baking dish with cooking spray.  Preheat oven to 425.  Open beans up right into pan.  Sprinkle with cayenne, sugar, salt and pepper.  Chop bacon and fry in a skillet.  Add garlic clove and onion.  When soft, sprinkle heavily with brown sugar.  When brown and crispy, take off heat and add bread crumbs.  Spoon on top of beans and bake until brown and bubbly.  If your dish is really shallow like mine, bake on a cookie sheet.  Enjoy!
