What I’ve been up to…

Insomia.

I can’t sleep.  I’m not sure why… I’ve been running around like a mad woman since 9:30 this morning.  Well, not mad exactly, I just have lots of little things to get in order for Christmas :)

Life has been different lately.  Matt went and got himself a new job.  He’s installing closet systems at the A-Tech Easy Living Store in Urbandale.  He LOVES it!  I especially think he’s into the Monday thru Friday day shift job thing!  It’s been five or six years, at least, since he’s had a day job…  and for that we are grateful.

Though, I have to admit that it’s been quite a change for this girl!  It’s not a bad change, but it HAS been different.  Number 1, Matt picks me up every night from work, and he is home on Friday and Saturday evenings.  Um, crazy!  We can hang out with people, go on dates, have a somewhat normal life!

The best change has been that he is happy. When he comes home at night, he is content that he has done something productive.  So he’s usually ready to sit on the couch with a tasty beverage, and watch some tv with the woman.  Seriously… who IS this man, and Where has my husband gone???  Don’t get me wrong, I’m enjoying this guy…  but can I say that I was just getting into a groove with my evenings?  I think I had just figured out my routine!

The worst change in this new job…  drum roll, please…   I have become forced into the live of a morning person.  Yuck!  Seriously, we go to bed after the 10 o’clock news, and get up at 6:30.  Since when did I have to grow up???  What happened to keeping hairdressers hours, going to bed at one, and waking up at nine??? I mean, seriously, tomorrow is going to be nuts…  cause I’m up past eleven, can’t sleep, and I’m going to have to force myself out of bed at six-thirty so that I don’t further screw up the schedule :(

In other news, due to recent life changes, I have begun to perfect the art of french press coffee ;)   Seriously, I kinda enjoy groggily waking up when Matt does, and taking twenty minutes to indulge in the systematic calm of making our morning coffee.  I have to say that it makes the whole becoming an adult thing much more tolerable :)

Thankfully I’m starting to feel a bit drowsy….  so with that, I am going to bed.  Here’s hoping to me settling into a new routine one of these days… one that involves times to blog!


Casey’s Taco Bubble Pizza

Yes, you heard right:  Casey’s Taco Bubble Pizza… yum!  When my friend Autumn text messaged me on Monday night and told me she was going here, I was instantly drooling.  Now, about a year ago, I made a Pilsbury recipe for Mexican Bubble Pizza.  It was alright, but let me tell you:  This was amazing!

I started with the base of any great taco meat….  Half a large onion, a small green pepper, and one jalapeno all chopped up fine.

I let them soften in the skillet, then added a pound of ground beef.  Once that was browned, I added a packet of taco seasoning, and a half a cup of water, and let it simmer while I worked on this (and forgot to take a picture of my taco meat :) )…  The sauce and the bubbles!  I used a 24 oz jar of salsa and a cup of  ‘refried’ beans.  Now, m pizza was very saucy, you could have only added two cups of the salsa and been okay… I didn’t read the ounces until after i used it :)   I had intended to use two cups.

After mixing up the sauce, I used my handy kitchen shears to cut two tubes of grands biscuits into eighths, and mixed it all up!

Now, at this point I should have taken more pics, but I didn’t.  Space case?  That would be me!  My days and nights are all turned around as we’re still waiting for life to regain a sense of normal… that and this was my third cooking project of the day.

After mixing up the saucy bubbles :) , you add a cup of cheddar cheese, and your cooked taco meat.  Dump into a greased 9×13 pan.  Bake at 400 degrees for 20 minutes, top with more cheese, and bake for another 20 minutes.  Plate up, and top with lettuce, tomato, and a dollup of sour cream….

Casey’s Taco Bubble Pizza

  • half a large onion
  • small green pepper
  • 1 jalapeno
  • 1 lb ground beef
  • taco seasoning
  • 1/2 cup water
  • 2 cups salsa
  • 1 cup refried beans
  • 2 tubes large refrigerated biscuits
  • 2 cups cheddar cheese
  • lettuce
  • tomato
  • sour cream

Saute onion and peppers.  Add Beef, and brown.  Sprinkle with taco seasoning, and add water.  Simmer on low til thickened.

Mix salsa and beans together in a large bowl.  Cut biscuits into eighths and add to sauce.  Mix in half of cheese, and all of ground beef mixture.  Pour into greased 9×13 pan.  Bake in a 400 degree oven for 20 minutes.  Sprinkle with remaining cheese, and bake for 20 additional minutes.

Serve with lettuce, tomato, and sour cream sprinkled on the top.

One thing I forgot was taco chips, to truly be an authentic Casey’s Taco Bubble Pizza, taco flavored Dorito’s would make perfection.  All in all this is a pretty mild dish.  You could add a little more heat to the sauce with a spicier salsa than the one I used if you are into that sort of thing.  Also, if you are using canned refried beans, you might need to season a little more.  I used mine, and so they had quite a bit of flavor.

Quick-e’s

I have not fallen off the earth…. though our lives have turned upside down as of late

  • Matt got his hours cut and rearranged at work, so our work week has been Thursday through Monday.
  • Yep, that means I’ve been working EVERY Sunday.
  • We found out that we will not be doing the host home thing
  • I don’t really want to talk about that bullet point… or about the entire month of August.
  • Matt found a new job (\YAY) and will be starting part time while he works out his two week notice.
  • Then, starting Nov 5th our life can get back to normal, but hopefully a new and different kind of normal because my husband will be home in the evenings!!
  • I may not blog much as our life settles down.
  • Or, I might…. who knows.  I am starting to feel happier and more energetic since we found out about the new job yesterday.
  • We cleaned up the garden this afternoon (today’s my day off, which is SO weird) and I found these honkers…..

What do you call lunch at 3:30?

Today has been the strangest day!  First off, matt and I are both home.  Second, we woke up to the sound of a transformer being blown across the street.  Thus, we had no power and went to McDonald’s for breakfast :)   We left to do our errands at almost noon, and weren’t hungry at all, so it’s no surprise that lunch didn’t happen until 3:30.  But, can I tell you it was amazing.

I checked out my archives, and I am fairly certain that I haven’t shared this one with you guys yet :)   But, it’s oh so delicious!  We had coconut chicken with sweet chili sauce from Budget Bytes, which if you haven’t noticed, is one of my favs!

I followed Beth’s recipe with two alterations.  1.  I added a good pinch of ground ginger to the flour.  2.  I BAKED at 450 degrees for 14 minutes.  It’s not as brown and pretty, but it’s tasty!

The thing that really blew my mind today was my side dish.  With the coconut chicken you need to have something fairly mellow on the side so that the coconut flavor is able to shine.  Trust me.  I served with a garlic roast potato before and is was a serious fail.

So, here’s what I did….

Cheezy Ginger Orzo

  • 1 1/2 cup orzo pasta
  • 2 cups low sodium chicken broth
  • 2 Tablespoons butter
  • grated Parmesan cheese
  • fresh cracked black pepper
  • ground ginger

I put the orzo and broth into my rice cooker, and set to go right before i start breading my chicken.  When complete, add butter, a couple tablespoons of cheese, 13 cracks of pepper, and a good pinch of ginger.  Mix taste, adjust, love!

PS… Penzey’s ground ginger could possibly be substituted for the real deal, it’s amazing!


Quick-e’s

  • Today’s something productive was actually two things:  the dishes and the laundry :)
  • I made up for it by painting the base coat on a recipe box
  • and by baking some pumpkin spritz cookies… to use my newly acquired cookie press a la craigslist
  • I am also in the midst of tackling one of those scary domestic tasks:  baking with yeast.  I’m tacking by making cinnamon rolls, which for me is equally as scary…. thankfully I have a good recipe to work from, and a forgiving husband :)
  • Tomorrow and Thursday are Matt’s new days off, so we will be spending them together… our plans involve cleaning out our Explorer for his trip to MN with the guys this weekend, a lunch and movie date, grocery shopping, survivor, and I’m hoping to pick up a couple pallets somewhere along the way to do a wall project for the bedroom
  • I’m hoping we get to do said project on Thursday :)

That’s all I got.  IF the cinnamon rolls turn out, I will show you a pic.  If the DON”T I’m sure I will tell you all about it as well :)

 


Vacation!

I found myself at a cross roads:  either use my vacation time or lose my vacation time.  So, this week I am using it up!  No, Matt and I aren’t going ANYWHERE :( But, I have plans of my own to accomplish before I got back to work on Friday morning.

I’ve set the base guideline for the week that I have to get something accomplished before I can do something fun.  It’s pretty basic, I know.   Yesterday all I accomplished was washing our sheets… and in return I painted some recipe boxes.

This morning, I worked my tail off to deep clean my living room.  Boy, was it time!  instead of doing a simple dust,  this time I actually cleaned all the glass shelves, tables, and so on.  And, I made lunch for the hubs (stuffed green pepper casserole)

As a reward for myself, I decided that today would be the day that I would begin teaching myself how to sew.  Last Christmas, I was given my Great Aunt Ann’s sewing machine and it has been tempting slash intimidating me ever since.  Now, Ann would be 93 years old if she were alive, so you can imagine that her sewing machine isn’t the newest slash fanciest thing on the block…

I had no idea where to begin, so I grabbed the tiny little instruction manual.  And, I didn’t really get any farther than that :(   I had to text my friend Alisa and see if she was available.  Thankfully she was here within the hour, and figured this baby out (and gave me a tutorial on how to handle her)

And, three hours later….

Yeah, I know… three hours??  Let’s be honest, it was my first shot.  And, I am myself, and I may or may not have had to do the outer part three times because I couldn’t get the right side wrong side thing down right!  It’s rough, but I made with my own two hands :)

I’m going to have to practice up because I’ve got a mental list of things I want to make :)


Naan pizzas

Last weekend, we went out to Trader Joe’s, and scored some ingredients to make these yummy Naan pizzas… they were soft and chewy, yet the bottom got crispy… it was heavenly!

Here’s what I started with:

  • Naan… and Indian flatbread
  • Sweet Italian pork sausages
  • Nectarines
  • Havarti Cheese
  • Black Pepper Parmesan

I brushed the naan with olive oil, and seasoned with garlic powder, rosemary, and cracked black pepper.

Then layered on my ingredients.. starting with a bit of cheese on the bottom, and ending with the rest of top

And, baked for 10 minutes at 425.  Easy Peasy :)

I absolutely loved the combo with the sausage and nectarines, but I can’t say that matt was a huge fan of the warm nectariney goodness.  You can’t win them all.  In the future, I’m definitely going to make these again, but I may or may not make any one of a million regular pizza recipes!


Green Bean Smashed Potatoes?

I’m sitting here, the window open, a little bit chilled and sipping a nice warm cup of:

Yes, Nutella Hot Chocolate :)   Thank you pinterest!

. Nutella Hot Chocolate -1 cup of milk (any kind of milk will work) -2 spoonfuls of Nutella (this is my preference, but feel free to add as much or as little as you like) -whipped cream -mini marshmallows Directions: Pour about 1/4 of the milk into a saucepan on medium-low heat. Add the Nutella and whisk until blended. Slowly stir in the remaining milk. Add a pinch of cinnamon and whisk until hot and frothy.

yum.  yum.

This spring when our broccoli was in full swing, I HAD to figure out a way for my dear, sweet husband to eat more of it… which proved to be difficult because he is not a fan of cooked broccoli.  I ended up throwing together come broccoli cheese smashed potatoes, and they were a hit around here!

Flash forward to last week, and the broccoli is in a sad, sad state right now :(   So, I improvised and decided to make my dish with some end of season green beans


Let me tell you, these were a WINNER!

You’ll have to forgive me here, this isn’t going to be one of those exact recipes… mashed potatoes never are.  It’s the kinda thing where you dump and mix and taste.  But, I’ll give you a few of my tips and tricks since you asked.

First off:  the potatoes.   I’ve come to use exclusively red or gold potatoes.  Why?  Because they aren’t as starchy as your run of the mil russet, and are better for you.  These are particularly awesome for fried or roasted potatoes!  They aren’t as fluffy for mashed, but I like to leave the skins on and leave ”em kinda chunky anyways :)

Now, I think the crucial part to mashed potatoes comes before you cook them.  First, your scrub those babies down.  Then, cut them, and put them into a pot of cold water.  When i have cut all my potatoes, I then drain out all the water, and put fresh, cold water in the pan.

At this point, I liberally salt the water and put on the stove to boil.  Why do I salt at this point?  Truthfully it’s the only time I add salt, and somehow int he cooking process it perfectly seasons my potatoes.  If I wait until afterward, I feel like I’m trying to cover up a bland potato.  The salt really draws out the flavor during cooking, trust me.

Once your potatoes are falling apart when you pick them up with a fork, you’re going to drain, and return to your pan.  Add a liberal amount of butter.  I man the real deal.  Then, you want to smash up those spuds.  Once they are all broken up pretty well, add seasonings:  pepper, garlic, rosemary, and add a few splashes milk.  Then mix it up with your masher until they start to come together.  Add a little milk at a time until you get the consistency you desire….  little by little is the way to go, and the way to avoid runny and thin potatoes!

At the very end, toss in steamed and seasoned green beans, and serve!
